Use good-quality bone-in mutton.
Marinate for at least 6 hours.
Use raw papaya sparingly.
Don’t cook the mutton aggressively.
Bhuno the marinade properly before adding water.
Slow-cook until 85–90% tender.
Finish the cooking during dum.
Rest the biryani for 15 minutes before opening.
